Sweet Treats: Apple Carrot Muffins

I was looking for ways to use some of the last of the apples we picked a few weeks ago and wanting to make muffins. I found this recipe for Apple Carrot Muffins as Joy of Baking and decided to give it a try. The muffins came out fantastic. I lowered the sugar from 1 1/4 cups to 3/4 cup and they were still as sweet as I would want them to be. Next time I’ll try making them with white whole wheat flour.
